Ingredients

1/2 lb boneless skinless chicken breast, pounded thin and cut into strips or pieces
1 tbsp whole wheat flour
1 tsp cumin
1 tsp dried oregano
1/2 tsp cayenne pepper
ollive oil cooking spray
1 cup strawberries, chopped
3/4 cup onion, chopped
1/2 jalapeno pepper, chopped
1 clove garlic, minced
2 tbsp cilantro, chopped
juice of 1 lime
2 tsp honey
Multigrain Italian bread loaf
2 cups spinach
Directions
Makes 4 servings.
Toss chicken in flour, cumin, oregano, and cayenne. Saute in pan with olive oil until browned.
For salsa, mix together strawbrries, onion, jalapeno, garlic, cilantro, lime juice, and honey.
Slice and toast bread.
Place 1/4 cup spinach on 1 slice of bread. Top with 1/4 cup chicken and 1/4 cup salsa. Can be served open faced, or top with another slice of bread.
