Ingredients

    1 lb. lean Ground Turkey (white meat only)
    1 medium chopped onion
    3 T. Taco seasoning mix (low sodium)
    2 cups water
    3 zucchini, sliced
    28 oz. can diced tomatoes, low sodium
    2 cups frozen corn
    2 cups instant brown rice (uncooked)
    6 oz. shredded light cheddar cheese

Directions

In a skillet, cook turkey and onion until meat is no longer pink and onions are translucent; drain if necessary.
Stir in low sodium taco seasoning, water, zucchini, tomatoes and corn; bring to a boil.
Add rice. Reduce heat; cover and simmer for 5 minutes or until rice is tender and liquid is absorbed.
Sprinkle with cheese; cover and let stand until cheese is melted.
Makes 6 servings.

    i not a fan of this type of food i would remove corn add green pepper mushrom and see what happens also garlic seve with a green salad - 9/9/09
