Introduction

This is an entire dinner. You could serve it with a green salad or dinner rolls for some extra calories.

**Note: I know this isn't a low-sodium recipe, but you could probably remedy that by preparing your own bread crumbs and/or using fresh garlic. **

Ingredients

    8 frozen chicken tenderloin strips
    4 egg whites
    1 c. bread crumbs (any style)
    2 c. sliced zucchini
    2 c. sliced squash
    8 tsp. grated parmesan
    3 tsp. garlic powder
    1 Tbsp. black pepper

Directions

1. Preheat oven to 375.
2. As oven heats, slice vegetables and start a pot of water to boil.
3. Put all 4 egg whites in a medium bowl, and the bread crumbs in a separate medium bowl.
4. Coat chicken in egg whites, letting excess drip off.
5. Immediately coat in bread crumbs and transfer to a baking sheet.
6. Once all chicken is prepared, put into oven for 20-23 minutes.
7. After chicken is in the oven & water is boiling, put zucchini, squash, garlic powder, and pepper in the pot & stire occasionally.
8. The vegetables and chicken should be done about the same time.
9. Serve 2 chicken strips & 1 cup of veggies on each plate. Sprinkle vegetables with 2 tsp. parmesan.
