Introduction

Ingredients

    1 Red Pepper
    1 medium onion
    1 10oz. bag baby spinach
    1 sweet potato
    2 med. ears of corn - shucked
    1 jalapeno pepper
    1 chicken breast, boneless and skinless
    1 tbl olive oil
    .5 can of lite coconut milk
    curry powder to taste (I use 1 to 2 tbl)
    salt and pepper to taste

Directions

Add oil to large frying pan, med. high heat, add onion, peppers and stir fry for 5 minutes. Add corn, char slightly (2 minutes), add par-boiled sweet potato cubes, cook for 1 minute. Add red curry paste and curry powder, cook 1 minute. Add coconut milk, stir, add spinach. Salt and pepper to taste.
