Not sure healthy for you but SO good! If you don't like that the metallic taste that home made corn bread sometimes gets try using aluminum free baking powder, it makes a huge difference for me! Ingredients

    *Flour, white, 1 cup
    Granulated Sugar, 1/4 cup
    Yellow Cornmeal, 3/4 cup
    Salt, 1 tsp
    Baking Soda, 1 tsp
    Baking Powder, 1 tsp
    Egg, fresh, 1 large
    Evaporated Milk Fat Free, 1 1/3 cups
    Honey, 1/4 cup
    *Blue Bonnet Light Margarine, 1/4 cup, melted

Directions

Mix together, Dry ingredients. In a separate bowl stir together wet ingredients. Add to the flour mixture, stirring until just combined. Bake at 425 degrees for 30 minutes or until golden. I baked mine in a 10 inch cast iron skillet.
