Introduction

This is a great way to dress-up carrots as a nice side dish. My fiance hates raw carrots, and I worried about him getting enough veggies - but he loves them this way! Number of Servings: 5

Ingredients

    16 oz baby carrots
    3 tsp. olive oil
    2 Tbsp. snipped fresh basil

Directions

Makes about five 3-oz servings.

In a large bowl combine olive oil and basil.
Add carrots and toss to coat.
In a 15x10x1 inch baking pan, spread carrots in a single layer. Roast, uncovered, at 475 in the oven, until carrots are tender (stir once).
