Number of Servings: 7

Ingredients

    Loin chops, 7 (big, about 200 grams each)
    *Whole Wheat Flour, .1/3 c
    Organic All-Purpose White Flour 1/3 c
    Egg, fresh, 2 medium
    Olive Oil, 1 1/2 tbsp
    Hodgson Mill, Untoasted wheat germ, 5 tbsp
    Bread crumbs, dry, grated, plain, 1/3 cup
    Worchestershire sauce, a dash
    Creole Seasoning of choice, 3 T
    Water 1 and a half Tablespoons

Directions

Use three separate dishes or 1 shallow dish and 2 pieces of wax paper. Mix flours with 1T of seasoning in/on one; then egg, water, oil, 1 T seasoning, and worchestershire in second dish. In the third dish (or paper) mix bread crumbs, wheat germ, and 1 T seasoning.

Coat chops with flour, then egg mixture, then crumb mixture.

Place chops on rack on baking sheet in 425 degree oven. Bake 20 minutes, turn over, bake another 10 or until done. (thin chops only take 20)

For extra browning, give them a shot of cooking spray when you turn them. You could also set them on broil the last couple of minutes.

Of course, you can use smaller chops, egg whites instead of whole eggs to lower the stats more! This is what I have on hand (and I have boys to feed ;) These chops are about 7 oz each but I need this for my own tracker today.
