Got an original version of this recipe out of Oct/Nov 2004 Taste of Home Magazine (submitted by Julie Dometrovich from Aliquiipaa, PA). But, then, adjusted it to make it low calorie. Ingredients

    1 c. boiling water
    1/2 c. old-fashioned oats
    1-3/4 c. all purpose flour
    1 t. baking soda
    1 t. ground cinnamon
    1/4 t. salt
    Splenda equivalent to 3/4 c. sugar
    Brown sugar Splenda equivalent to 3/4 packed br. sugar
    1/3 c. unsweetened applesause
    1 egg
    1 1/2 t. vanilla extract
    1 med. apple, peeled and chopped

    Topping:
    1/2 c. old-fashioned oats
    1/4 c. all-purpose flour
    Brown sugar Splenda equivalent to 1/4 c. packed br. sugar
    1 t. ground cinnamon
    3 T. I Can't Believe It's Not Butter (stick)

Directions

In a bowl, combine boiling water and oats; set aside. In a large bowl, combine the flour, baking soda, cinnamon and salt. In a mixing bowl, combine the Splendas and applesauce; beat ingredients just until combined. Fold in the apple. Pour into an 8-in. square baking dish coated with nonstick cooking spray. For the topping, combine the oats, flour, Splenda Brown Sugar, and cinnamon. Cut in butter until mixture resembles coarse crumbs; sprinkle over batter. Bake at 350 for 40 to 45 minutes or until a toothpick inserted near center comes out clean. Cool on a wire rack. (May make 1/2 the topping ingredients to lower calories even more. And taste is just as good.)
