Ingredients

8 oz Barilla Plus Penne Pasta (uncooked)
1 lb boneless skinless chicken breast (I use a 1 lb pkg of breast tenders)
1/4 cup all purpose flour
1 tsp seasoned salt
1 tsp cracked black pepper
1 tbsp unsalted butter
1 tbsp olive oil
4 cloves garlic, chopped
1/2 cup dry white wine (may substitute chicken stock)
juice of 1 large lemon
zest of 1 lemon
Directions
Cook pasta according to package directions, drain and set aside. While pasta is cooking, cut chicken into bite size peices (1/2" - 1" pieces). Combine flour, salt and pepper in a large ziplock bag. Add chicken pieces and shake to coat.
Heat butter and olive oil in large skillet until sizzling. Add chicken pieces, shaking off excess flour and saute for 3 - 5 minutes, stirring frequently, until chicken begins to brown. Add crushed garlic to pan and continue to saute for 2 - 3 minutes, until chicken is browned and garlic is fragrant. Add wine, lemon juice and lemon zest to pan, scraping brown bits from bottom of pan. Reduce heat to low, cover, and simmer for approx. 10 minutes, until sauce thickens slightly and chicken is cooked through. Add drained past to pan and toss to combine.
Makes 4 servings.
*I serve with a side of fresh broccoli, sprayed with olive oil cooking spray, seasoned with garlic pepper, and roasted at 450 degrees for about 15 minutes*
