    drizzle olive oil
    kosher salt and pepper to taste
    1 med eggplant
    2 med fennel bulbs, trimmed and sliced
    1 each yellow/orange/red bell pepper
    1 26 oz jar marinara sauce
    1 c grated parmesan cheese
    1 c plain bread crumbs
