Introduction

Ingredients

    Chicken Breast, no skin, 12 ounces
    *Sargento Light String Cheese, 1 serving
    Apples, fresh, 1 small (2-1/2" dia) (approx 4 per lb)
    *Lawry's Caribbean Jerk Marinade, 3 servings

Directions

Place each chicken breast between plastic wrap or in a plastic bag and pound with a meat tenderizer until even thickness. (You can use a rolling pin or frying pan to pound chicken, too.)

Put chicken and Lawry's marinade in a covered container in the fridge for at least 30 minutes. Add more spicy seasonings if you prefer an extra kick.

When ready to bake, preheat oven to 350 degrees. Line a small baking dish with aluminum foil and spray with cooking spray.

Slice and core the apple leaving the skin on. Cut the string cheese in thirds and then cut each piece in half resulting in 6 equal, thin pieces of string cheese.

Place one chicken breast on a plate and arrange 1/3 of the apple slices and two pieces of cheese. Fold the chicken breast over itself in half so the apples and cheese are inside and secure closed with a toothpick. Place in the prepared baking dish. Repeat for the remaining 2 pieces of chicken.

Bake for approximately 20 minutes or until the chicken is no longer pink. Serve and enjoy!
