Ingredients

    * *Flour, white, 1 cup (remove)
    * Instant, Quick, and Regular Oats Cereal, .5 cup, dry, yields (remove)
    * Granulated Sugar, 3 tsp (remove)
    * Cinnamon, ground, .5 tsp (remove)
    * Nutmeg, ground, .25 tsp (remove)
    * Salt, .5 tsp (remove)
    * Baking Powder, .5 tsp (remove)
    * Baking Soda, .5 tsp (remove)
    * *Canola Oil, 1 tbsp (remove)
    * **Flax Seed Meal (ground flax), 1.5 tbsp (remove)
    * Cider Vinegar, 1 tbsp (remove)
    * Soy Milk, 1.25 cup (remove)

Directions

Makes 3 servings.

Put 1 tablespoon of lemon juice (or vinegar) in a 1 cup measure and fill cup with soy milk. Set aside.
Measure all of the dry ingredients into a bowl and mix together with a spoon.
Pour in the oil, and the soured soy milk. Stir until just mixed. If not thin enough for pancake batter, stir in up to 1/4 cup more of soy milk (or water).
Fry in margarine as for regular pancakes. (Note: nutritional information does not include the margarine for frying.)
Mix in fresh or frozen blueberries if desired.
Serve with fresh sliced strawberries (Yum!) or with maple syrup and margarine. (Nutritional information does not include what you put ON the pancakes.)

    Incredible!
    My additions were 1/2 a carrot and 1 small apple finely grated.
    They turned out great even without baking powder.
