Ingredients

1 Tbs. olive oil
1 large red onion, chopped
2 cloves garlic, chopped
1 inch piece of ginger, thinly sliced
1 large apple, graded
8-10 large carrots, chopped
1 tsp. coriander powder
1/4 tsp garam masala
1 dash chili flakes
1.5 tsp. vegetable bullion granules
Directions
1. Heat olive oil over medium in a large stock pan, add onions and garlic, frying for about 1 minute.
2. Add the carrots, ginger, and apple, cook for 5 minutes. Stir in the coriander, garam masala, vegetable stock and chili flakes.
3. Next, add about 2 pints of boiling water, stirring well. Allow the vegetables to simmer until the carrots are soft, about 30 minutes.
4. Carefully pour the soup into a food processor and blend until smooth. Garnish with fresh coriander.
Makes 3 large bowls.
