Introduction

Ingredients

    Bruschetta (makes 4 servings):
    3 Roma tomatoes (beefsteak varieties can be used as well, but then only 1 tomato)
    1 bunch basil (more if you like it spicy)
    3 cloves garlic (again more if you like it spicy)
    2 T olive oil

    Burgers (each):
    2 pieces of sandwich bread (vegan)
    1 vegan boca burger original
    1 T Tofutti Better than cream cheese (room temp)

Directions

Muddle (squish and pound) the basil leaves and garlic with the olive oil to release the flavors. Chop the tomatoes and mix all of the bruschetta ingredients together then let sit. The flavors blend better if left at room temp, but if you're making this beforehand put it in the fridge.

Smear the Tofutti on one slice of bread and toast in a toaster oven. If you don't have a toaster oven, toast the bread in a regular toaster and spread the "cream cheese" on while it's still warm.

While the bread is toasting, brown the burger in a pan (or microwave it if you're in a hurry, but it affects the quality). Assemble the burger with 1/4 the bruschetta spread (about 1/2 C), and enjoy!
