Ingredients

1lb beets, about 3 large beets, stems removed
1 1/2 tbsp. olive oil
1/2 onion chopped, about 1/2 to 3/4 cup
1 clove of garlic finely minced
1 tbsp. all purpose flour
1 cup vegetable broth
2 tbsp brown sugar
1/3 cup cider vinager
Directions
1. Put the beets in a large sauce pan, cover with water and bring to a boil. Reduce heat, cover and simmer until beets are tender, about 20 - 25 minutes.
2. Drain, cool, peel and dice beets *to cool more quickly dump the beets into a colander and run under cold water until cool enough to handle.
3. In a large skillet, heat oil over medium-low heat. Add onion and sauté until onion is just tender, about 3 minutes. Add garlic, stirring for one minute longer. Stir in flour until blended into the oil. Stir in vegetable broth, beets brown sugar and vinager. Bring to a boil, reduce heat and simmer for another 10 minutes. Serve and enjoy!
