Ingredients

    Onions, 1 cup, chopped

    Garlic, 2 cloves

    Extra Virgin Olive Oil, 1 tsp

    Swanson Certified Organic Vegetarian Vegetable Broth, 1.5 cup

    Quinoa, 0.75 cup

    Ground Cumin, 2 tsp

    Ground Cayenne Pepper, 1 tsp

    Flavorite Super Sweet White Corn, Frozen, 1 cup

    S&W Black Beans Less Sodium, 2 cans

    Hunt's Tomatoes, Petite Diced, 1 can

Directions

Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned.

Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 10 minutes.

Stir frozen corn, beans, and tomatoes into the saucepan. Continue to simmer about 10 minutes.
