Ingredients

4 chicken breasts (or 8 tenders)
2 cups chicken broth
1/4 cup cider vinegar
2 Tbsp brown sugar
2 tsp soy sauce
1 clove garlic
1 cup chopped onion
1 cup chopped green bell pepper
1/2 cup pineapple tidbits in juice
2 cups cooked rice
Directions
1. Spray slow cooker with olive or canola oil cooking spray. Place 4 chicken breasts (halves) or 8 chicken tenders in slow cooker. Top with sliced or chopped onions and peppers.
2. Stir together low-sodium free-range chicken broth, apple cider vinegar, brown sugar, low-sodium soy sauce and garlic in small pot on stove. Heat until warmed through and combined. Pour over chicken, onion and peppers.
3. Add pineapple in juice to slow cooker, stirring to combine with sauce.
4. Cook on high 4 hours, or low 6-8 hours, until chicken is cooked through. During last 30 min. of cooking, turn to low and stir in one package of Trader Joe's Thai-Style Lime Rice Pilaf, or 2 cups of any cooked rice of your choosing. Leave lid off slow cooker so rice can absorb some of the sauce. Serve.
