Ingredients

3/4 cup whole wheat flour
1/2 cup white flour
1/2 t baking soda
1 t baking powder
1/2 t salt
1/2 t cinnamon
1 cup old fashioned oats, not instant
1/3 cup 1% or skim milk
2/3 cup unsweetened applesauce
1/4 brown sugar, packed
1/4 cup molasses
2 T canola oil
1 large egg, slightly beated
1 1/2 cup carrots, shredded
1/2 cup chopped prunes
Directions
Preheat oven to 400. Line muffin pan with liners.
In large bowl which flours, baking soda, baking powder, salt and cinnamon. Stir in oats.
In medium bowl w/ fork mix milk, applesauce, brown sugar, molasses, oil and egg until blended. Stir in carrots and prunes.
Add wet ingredients to flour mixture and stir until just moistened. Batter will be lumpy.
Spoon batter into muffin cups. Cups will be full.
Bake 23-25 minutes or until toothpick inserted comes out clean. Immediately remove muffins from pan. Cool on a wire rack.
You can enjoy warm but I think they are better the next day!
