Introduction

This is a quick cake that is a cross between a pound cake and a coffee cake. Very tasty! This is a quick cake that is a cross between a pound cake and a coffee cake. Very tasty!

Ingredients

    1/2 cup white whole wheat flour, 1/2 cup self-rising flour, 2 large eggs, 1/4 cup Splenda brown sugar blend, 1/4 cup Splenda, 1/4 cup sugar, 1 stick salted butter, melted (I used Smart Balance), 1/4 cup sour cream, 1/2 cup chopped pecans

Directions

Preheat oven to 350 deg F. Heavily butter 9" cast iron skillet. Whisk together flours. In separate bowl, whisk eggs and sugars together. Add melted butter and whisk until satiny. Add flour mixture and whisk until smooth. Stir in sour cream. Spread batter in skillet and top with pecans. Bake 25 minutes or until toothpick inserted in center comes out clean. Serve warm or at room temperature. Serves 8.
