Introduction

Love love love these! Best of all worlds....chocolate that is lowfat and not horribly high in calories but fulfills cravings! Love love love these! Best of all worlds....chocolate that is lowfat and not horribly high in calories but fulfills cravings!
Number of Servings: 16

Ingredients

    32 junior mints
    1/4 C. butter
    1 C. flour
    1/4 t. baking soda
    1/8 t. salt
    2/3 C. sugar
    1/3 C. cocoa
    1 egg
    1 egg white

Directions

Preheat oven to 350 degrees

Spray bottom of 8" pan with cooking spray, set aside.

melt together butter and junior mints in glass cup in the microwave for 30 seconds or so.

mix together flour, baking soda, and salt. set aside

Mix together sugar, cocoa, egg, and egg white in bowl of mixer. Beat at medium till well-blended. Add in mint mixer and beat well. Blend in flour mixture on low until blended. Pour into prepared pan and then bake for 20 minutes or until a wooden pick inserted into center comes out clean. Cool completely then cut into 16 pieces!

    Very tasty and easy to make! I think I needed a *little* more junior mints- the minty taste was a little lost. But I also added applesauce and vanilla extract, so it might have been my fault :) Delicious, thank you! - 10/10/09
