Introduction

Number of Servings: 4

Ingredients

    2 large fish filets (for wild fish such as salmon or trout add 1/4c white wine)
    juice of one lemon
    1 tbs each fresh of
    thyme
    basil
    rosemary
    oregano

Directions

preheat oven at 350. Line small brownie pan with aluminum foil and spray with eather a bit of pam or I Can't believe it's not butter spray. Place filets in pan.

In a bowl combine all other ingredients. Smash herbs into juice to release the flavors. Brush the mix onto the fish making sure to use all of it.

Cover pan with more foil and bake for 20-25 minutes until fish flakes easily with fork.

Makes 4 1/2 filet servings

    Thanks for sharing this recipe. I'm thinking a fish such as pollock could be substituted for the orange roughy since orange roughy is an endangered species and might also be high in mercury content. - 10/2/08

    thank you so much! I had no clue it was endangered. If I had known I wouldn't have bought it at the store. Thank you for that info. Also I add white wine to the recipe for any wild game fish like salmon or trout. Seriously thank you so much.
