so easy and you can add fresh fruit. so easy and you can add fresh fruit.

Ingredients

    1 cup flour
    3/4 cup silk vanilla soy milk
    1 medium to large egg
    dash of salt
    3 tsp baking powder
    2 tbsp brown sugar packed

Directions

mix dry ingredients. mix wet ingredients. combine both wet and dry together. mix very well until smooth. heat non-stick pan on medium heat. spray with non-stick cooking spray. scoop 1/8 of a cup of batter into pan. flipping when golden brown on bottom and bubble are popping on top. when using and 1/8 of a cup this recipe makes 15 pancakes.

    I had these pancakes with a banana this morning. They were definitely quick and easy, but needed something else to turn up the flavor. - 2/3/10
