Ingredients

Spray Oil or Butter
3 Leeks (white parts only), trimmed, well rinsed and sliced
1 medium onion, peeled and chopped
5 medium potatoes, peeled and chopped
6 cups chick broth (or stock)
1 tsp black pepper
1 cup skim milk
Optional: stilton or blue cheese to taste
Directions
1. In a skillet, sprayed with oil or butter, over medium low heat, saute leeks and onion until tender (about 10 minutes). Transfer to slow cooker.
2. Add potatoes, broth, and pepper to slow cooker. Cover and cook on high for 4 - 6 hours or on Low for 8 - 10 hours, until vegetables are tender.
3. Transfer soup to blender or food processor in batches. Puree soup until smooth. Return soup to slow cooker; stir in milk. Cover and cook on high 15 - 20 minutes.
Optional: If there is someone in your household that is willing to splurge, add stilton or blue cheese to bottom of each bowl prior to serving.
