Ingredients

    3 large Organic Valley egg whites
    2 cups pumpkin
    1/3 cup oil
    1/3 cup unsweetened apple sauce
    3 cups white whole wheat flour (white flour optional)
    2 cups sugar
    2 tsp. baking soda
    1 ½ tsp. cinnamon
    1 tsp. nutmeg
    ½ tsp. baking powder
    ½ tsp. salt
    ¼ tsp. ground cloves
    12 oz. bag of chocolate chips

Directions

Directions:

1.Preheat oven to 350º F.
2.Mix together the egg whites, pumpkin, oil and unsweetened applesauce.
3.Sift in flour, sugar, baking soda, cinnamon, nutmeg, baking powder, salt and cloves.
4.Mix only until ingredients are moistened.
5.Fold in 12 oz. of chocolate chips into batter; pour evenly into two greased and floured 8x 4 x 3 loaf pans.
6.Place in oven and bake 55-60 minutes or until you are able to poke it with a toothpick and remove it with the toothpick staying clean.
7.Cool 5 minutes before removing from pan.
8.Once cooled, cut into ½ inch slices.

Makes 2 loaves 8x 4x 3 in size.
