Ingredients

1.5 lbs. boneless skinless chicken breast
4 c. cooked great northern beans
1 whole onion, diced
1.5 c. frozen white corn
1 yellow bell pepper, diced
3 clove garlic minced
6 tbsp. mild green chili diced
6 tbsp. hot green chili diced
2 can light chicken broth
2 tsp. cumin powder
1 tbsp white pepper
1 tbsp fresh cilantro
2 tbsp olive oil
1/3 c. lime juice
12 tbsp light sour cream
6 oz. pepperjack cheese, shredded
Directions
Makes 12 1.5 cup servings.
Cube the chicken breast. Heat olive oil in a large pan and saute onion, garlic, and chicken until chicken is no longer pink.
In a large crock pot add chicken broth, cumin, cilantro, white pepper, lime juice, and chopped green chilis. Cook on high for an hour. Reduce heat to low and add remaining ingredients except sour cream and pepperjack cheese. Cook for an hour. Stir 1 tbsp sour cream into each bowl of chili and top with 1/2 ounce of shredded pepperjack cheese.
