Introduction

Thanks to ACROGERS for the original recipe. I tweaked this a little, and added more detailed directions for those of us who are more kitchen challenged. ;) Thanks to ACROGERS for the original recipe. Number of Servings: 16

Ingredients

    1 box dry carrot cake mix
    1 medium zucchini, grated
    1 15-oz can packed pumpkin
    1/2 cup chopped walnuts
    1/2 cup water

Directions

Mix together ingredients until fully moistened.
Fill muffin cups almost to the top.
Bake at 350F for 20-25 minutes. (You should be able to insert and remove a toothpick or knife point cleanly.)
