Ingredients

1 pound ground lamb
Half a package of frozen Peas and carrots
1 onion, chopped
2 shallots, chopped
1 clove garlic, smashed
14 oz can diced tomatoes, drained
1 cup shredded cheese divided (1/4 cup, 3/4 cup)
2 cups instant mashed potatoes, prepared with skim milk and without oil or butter
Directions
Prehead oven to 350.
Prepare mashed potatoes according to instructions, omitting oil and using skim milk.
Brown lamb (or beef) with vegetables, garlic and onions until it is no longer pink. Drain thoroughly, and rinse under hot water for 30 seconds. Shake out excess liquid.
Return to pan, and add tomatoes. Cook for a few minutes until any excess liquid has evaporated.
Place mixture into a 9X9 baking dish or glass pie tin. Top with shredded cheese, reserving 1/4 cup. Top with mashed potatoes, spreading it out over the meat mixture. Top with the reserved cheese.
Bake at 350 for 30 minutes, or until cheese is bubbly.
