Ingredients

    Potato - boiled -1 small (1-3/4" to 2 1/2" dia), 5 serving
    Cumin seed, 1 tsp
    Garam Masala, 0.5 tsp
    Coriander Seed, Ground (1 Tbsp), 1 tbsp
    Fennel seed, 1 tbsp
    Chili powder, 0.5 tsp
    Yogurt, plain, whole milk, 1 cup (8 fl oz)
    Salt, 1 tsp
    Ginger & Garlic Paste, 0.25 tbsp
    Oil - 2 tsp

Directions

Boil the smallest possible potatoes that you can purchase and peel the skin and keep aside. Now in a pan take some oil and heat it. Add the cumin seeds, when it splutters add either whole garam masala or powder. Add the ginger garlic paste and saute. (In variation you can also use either whole garlic and add 0.25 tsp of ginger powder along with other powders). Also add the fennel seeds; (again in variation you can use fennel powder in the concoction below). Make a concoction of coriander powder and red chili powder with water and add this to the mixture. Saute it till the oil oozes out. When this happens add the yougurt and bring to boil. Then add little water. You can thicken the mixture and keep more gravy depending on your taste. To thicken you can add crushed cashews into fine powder and add it. Then add the salt and you may dress it with fresh coriander leaves. Serve hot with chappatis / rotis.
