Ingredients

2 kg. pkg. b/s chicken breasts
1/2 tsp black pepper
1 14-oz can jellied cranberry sauce
1.5 Tbsp fresh squeezed lemon, orange OR lime juice
2 tsp lemon, lime OR orange zest or you can use a combination (not fussy)
2 Tbsp sodium reduced Soy Sauce
1 Tbsp margarine
Directions
Makes 20 100g. (1/2 chicken breast) servings.
Preheat oven to 425 F.
Place whole chicken breasts topside down into a large baking pan lined with foil and sprayed with oil. Sprinkle with pepper.
In a saucepan or microwave safe dish, combine, cranberry sauce, soy sauce, orange (lemon,or lime) juice, zest and margarine and heat stirring constantly if on cooktop, or intermittently if in microwave, until sauce and margarine are melted.
Pour sauce over chicken pieces; bake 30 minutes, then turn chicken pieces over and bake 20 minutes longer. Place chicken breasts (cut in half) onto heated platter; pour sauce into a gravy boat and pass along with the chicken.
NOTE: don't overcook, as sauce can start to burn onto the pan.
