Introduction

Basic potato salad. This is my Dad's recipe - just substitued the light mayo. We like lotsa mustard, so you may want to cut that in half and add to your own taste. Basic potato salad. Number of Servings: 7

Ingredients

    4 medium sized red potatoes
    8 tbsp. Kraft light mayo (this is equal to 1/2 cup)
    1 tablespoon yellow mustard
    1/2 dill pickle, chopped
    2 large boiled eggs, chopped
    1 tbsp. pickle juice
    salt and pepper to taste

Directions

Boil potatoes in water for 30-45 minutes or until tender when poked with a fork. Add eggs to the pot when there are about 20 minutes left to cook. Let cool. Peel and dice potatoes. Shell and chop eggs. Chop pickles. Mix all ingredients in a large mixing bowl.

Makes about 7 half-cup servings.

    Made this tonight; everyone liked it. I added chopped onion & celery- just because that's what we're used too. Also added a little dill. Was very good. - 5/15/10
