Introduction

I typically use noodles in this soup but a friend gave us a case of cheese tortillini so we used it instead. I typically use noodles in this soup but a friend gave us a case of cheese tortillini so we used it instead.

Ingredients

    1 1tsp Olive Oil
    12 oz cheese tortillini
    1 cup, chopped Carrots, raw
    1 cup, diced Celery, raw
    .5 cup Black Beans
    .5 cup Beans, pinto
    6 cup Water, tap
    3 can (5 oz) Canned Chicken,
    1 cup Onions, raw, chopped
    1 cup Mushrooms, fresh, chopped
    1.5 cups Campbell's Healthy Request Cream of Celery Soup
    1.5 cups Cream of Chicken Soup
    1 tsp Seasoning Salt
    1/2 tsp Pepper, black

Directions

Cook cheese tortillini according to package directions. I added a pinch of salt to a big pot of water, turned up heat until water was boiling, added tortillini then cooked until soft approximately 13 - 15 minutes. Saute onion in olive oil until soft. Add celery and carrots and saute a couple of minutes then add mushrooms. Saute a few more minutes then add broth and water. Stirring occasionally to keep from sticking. When mixture is hot, add chicken and the cream of celery/cream of chicken soup, beans, and remaining ingredients. Note: you can use your favorite "cream of" soups. I usually use a variety but I stick to the low fat or fat free versions. Turn down heat and let simmer with lid on. Makes approximately 10 2 cup servings.
