Ingredients

1 package baby arugula prewashed salad mix
4 cups cooked whole wheat spaghetti
1 can Italian diced tomatoes-drained
2 tbsp olive oil
1/2 cup feta cheese (any variety the med. seasoned is really good in this)
1 tbsp black pepper-or to taste
1 tsp kosher salt
Directions
Cook pasta according to package directions, drain and set aside.
Add oil to a large non-stick pan and heat on med-high heat. Add arugula and kosher salt.
Stir argula to wilt.
Add the tomatoes and cook for a minute, then add the feta cheese, pasta and black pepper.
Cook while stirring to mix flavors and melt down the feta for about another minute.
