Ingredients

    6 oz smoked summer sausage or soft beef salami cut in cubes
    3-4 diced tomatoes or 1 basket of cherry or grape tomatoes
    1 bundle fresh basil, chopped
    8 oz (1 tub) whole milk fresh mozzarella balls
    2-21/2 cups steamed broccoli crowns
    4 servings whole wheat rotelle or penne pasta
    2 tbsp olive oil
    2 tbsp grated parmesan cheese
    salt and pepper to taste

Directions

Boil water in a large pot and add pasta. While pasta is cooking, rinse veggies, slice or dice tomatoes, cut sausage in cubes, chop basil, cut mozzarella balls in cubes, steam broccoli and put everything in a large serving bowl. When pasta is done, drain and add to the serving bowl. Drizzle with olive oil and sprinkle with parmesan, salt and pepper to taste. Toss with salad forks and serve.

Makes approximately 8 1.5 cup servings.
