Introduction

These muffins are great anytime of day. Not too sweet, moist and flavorful. If you'd like add a half cup chopped apple or zucchini, dried cranberries, grapes, chopped nuts..anything goes! Ingredients

    1 cup old-fashioned oats
    1 cup lowfat buttermilk
    1 egg, slightly beaten
    1/4 cup canola oil
    1/2 cup brown sugar
    1 cup all purpose flour
    1 t. salt
    1/2 t. baking soda
    1 1/2 baking powder

Directions

Makes 12 standard sized muffins

Preheat oven to 400. Grease, spray or line muffin tin. Mix oats and buttermilk. Let stand 5 minutes. Add in beaten egg, oil and brown sugar. Mix. Add in flour, salt, baking soda, and baking powder. Stir until just combined. Fix prepared pan a litte more than halfway. Bake for 18 minutes. Cool on a wire rack. Enjoy!

    I have the same recipe from an old cookbook: they are the best muffins I've ever had. I usually add a handful of chocolate chips, or sometimes chopped dates. They disappear so quickly in my house!! - 2/19/12
