Introduction

Omit the basil and add other ingredients to satisfy your taste. Try fresh spinach and a pinch of nutmeg or add salsa and ground turkey. I make this frittata ahead of time and store individual servings in the fridge. A quick 45 seconds in the microwave and I have a yummy start to my day. Ingredients

    6 medium eggs
    4 oz shredded romano cheese
    1 tbsp basil

Directions

Beat eggs, add shredded romano cheese, and basil. Mix well. Spray cooking spray in med. iron skillet, heat on low heat. Pour egg & cheese mixture into warmed skillet. Allow to heat until eggs are set on bottom...do not disturb!
Place skillet in oven under broiler, until light brown and eggs are completly cooked. Do not over cook. Makes 5 servings.
