Ingredients

2 lb. bone-in skinless chicken breast
3 stalks celery
2 cups onions diced
2 cups carrots diced
1 can sweet corn
salt to taste
pepper to taste
ground oregano
2 bay leaves
1 bag whole wheat spaghetti, #3
Directions
take the chickenand put it in 1 gallon of water. add salt pepper and bay leaf, along with oregano.
bring to boil and boil until chicken is cooked through.
dip chicken out and put in a colander to cool.
While chicken is cooling, add celery, onions, carrots, and corn to chicken stock you just made. bring back to a boil.
When boiling, break spaghetti noodles into 2-3 inch sections and place in stock.
when you get the noodles into the stock left from boiling the bone-in chicken, de-bone the chicken and discard bones.
dice chicken breast and add to pot.
make sure to take out bay leaves.
cook until noodles are done.
This freezes well and is even better the second day.
Serve with whole wheat bread croutons and enjoy
