Introduction

Number of Servings: 12

Ingredients

    1/2 cup sugar
    1/3 cup white vinegar
    1/4 cup vegetable oil
    1/2 tsp pepper
    1/4 tsp salt

    1 16oz can French style green beans
    1 16 oz can peas
    1 16 oz can corn, drained
    1 2 oz jar diced pimentos or roasted red peppers
    1 cup chopped celery
    1 green pepper finely chopped
    1 bunch green onions chopped
    1 8 oz container crumbled feta cheese
    1 bunch broccoli cut into small flowerets
    1 cup cucumber, peeled & sliced
    2 cups cauliflower

Directions

Combine the first 5 ingredients in a pot and bring to a boil stirring to dissolve the sugar and then cool.

Combine all the vegetables and stir in the vinegar mixture and then cover and chill for at least 6-8 hours.

You can use most any vegetable since this really lends itself to creativity.
