Originally taken from La Madeline's Tomato Basil Soup, after my weight loss surgery I had to find a healthy alternative to using butter and heavy cream. So here is my take on my favorite soup! Number of Servings: 8

Ingredients

    4 cups of canned crushed tomatoes
    4 cups V8 Vegetable Juice, low sodium
    14 to 16 Basil leaves
    1 cup fat free half and half
    1 tbsp I Can't Believe It's Not Butter Light Spread
    1/2 cup Low Sodium Chicken Broth

Directions

1. Combine crushed tomatoes and V8 Vegetable Juice in a saucepan and bring to a simmer.
2. Simmer for 30 minutes.
3. Add washed Basil leaves to the soup and puree in a blender, food processor or use a hand held immersion blender until smooth.
4. Return to saucepan and add the chicken broth and light margarine spread. Once the margarine spread has melted add the fat free half and half while stirring and cook over low heat until warmed through.
5. Garnish with additional basil leaves if desired and serve.
