Introduction

Ingredients

3 cups whole wheat pastry flour
1 cup sugar
3 Tbsp. unsweetened cocoa powder
1/2 tsp. salt
2 1/4 tsp. baking soda
1 Tbsp. vanilla
2 Tbsp. vinegar
1/2 cup canola oil
2 cups boiling water
Directions
In a good-sized mixing bowl, sift together flour, sugar, cocoa powder, salt and soda.
Make 3 holes in dry ingredients. Pour vanilla, vinegar and oil into those holes.
Add boiling water. Beat two minutes by hand or with a mixer. (This will make a thin batter.)
Pour batter into 9x13 baking pan, 3 greased 8" round baking pans for a layer cake.
Or using a 1/2 cup measure, scoop batter into 18 cupcake wells, I have silicone cupcake pans, alternately use cupcake papers muffin tins or a greased muffin tins.
Bake at 350 degrees for 30 minutes or until tester inserted in center of cake comes out clean.
No frosting is required.
