Number of Servings: 8

Ingredients

    - 1-2 boneless, skinless chicken breasts
    - 1 8 oz. can tomato sauce
    - 1 28 oz. can Rotel (diced tomatoes & green chilies)
    - 1 can kidney beans
    - 1 can black beans
    - 1 can corn
    - 1 medium white onion, chopped
    - 1 package taco seasoning

Directions

Combine all ingredients except chicken in slow cooker and stir. Place chicken breasts on top. Cover and cook on low for 6-8 hours. Prior to serving, remove chicken breasts, shred them, and return to soup. Garnish with low-fat sour cream, low-fat shredded cheese, avocado, cilantro, etc. Serve with warm corn tortillas.

    This recipe was awesome! I substituted green onions for the onions for color, and used the less abrasive 1/1 tomato suggestion. Thank you so much. We will add this to our recipes! - 10/27/10

    Fixed this on Saturday after having some at a SparkTeam Meet & Greet! Yummy! We put a bit of cheese, corn chips crushed up and sour cream on it... made a nacho soup, my son calls it, lol. - 1/11/10
