This recipe isn't truly a "pie" but it is heavenly! Every time I make this I am asked for the recipe. Great option for any holiday or special occasion. Ingredients

    1 Egg, fresh
    3/4 tspGranulated Sugar
    1/2 tsp Vanilla Extract
    1/2 C Flour
    1 tsp Baking Powder
    1/4 tsp Salt
    1 C chopped Apples
    1/2 cup Pecans chopped

Directions

Bake 350 degrees ~ Serves 6

Beat egg until light; add sugar, vanilla, flour, baking powder, salt, apples and nuts. Pour into a greased 9" pie pan. The pan will not be full. That's okay do not double unless you are going to make two of them or put the batter into a 9X11 pan. The ingredients will fill the pie pan when baked with a single recipe even though it looks like it won’t. Bake for 25-30 minutes or until toothpick inserted in center comes out clean. Top with whipped cream, if desired.
