Introduction

This combines several pork recipes, including an Alsatian stew (without potatoes). Great over brown rice with a nice scoop of black beans on a cold day with a green salad or bowl of pumpkin soup to bring out the contrasts. Ingredients

    2 boneless pork chops, sliced into strips (about .6 lb)
    2 small apples, sliced or cubed (I prefer one golden and one crisp red)
    1 c. onions, sliced (2 small or 1 medium)
    1 T. minced garlic (3 cloves)
    1 T. canola or olive oil
    2 c. cabbage, chopped or sliced
    1 c. apple or white grape juice
    2 T. dijon mustard
    1/2 t. dried thyme

Directions

In skillet or wok, heat oil, add onion and garlic and stirfry til translucent. Remove temporarily and stirfry pork until outside is grey not pink. Replace onion/garlic mixture in pan and add apples, cabbage, dijon mustard, thyme and light-colored juice. Cover the wok or skillet and let the mixture cook on medium heat, stirring occasionally, until cabbage wilted and pork thoroughly cooked. Makes 3 hearty servings.

    Good dish - easy to prepare. I added some fresh ground black pepper. Seasoning is a little bland - would increase thyme next time. - 9/23/11
