Ingredients

    8oz Ground Turkey
    1 lb roll of Italian turkey sausage
    2 large eggs
    1/2 C saltines crushed- Can use quick cooking oats
    1/2 Can of Fire roasted tomatoes- chopped to remove big clumps
    1 large onion
    1 large green bell pepper
    Garlic Powder- to taste
    2Tbsp Cilantro
    2Tbsp Cumin
    1 tsp. Black Pepper & Salt -or to taste
    Your favorite salsa as a topping

Directions

Add chopped onion and green pepper to pan and saute till onion is soft.
In large bowl add meats, crackers, eggs, tomatoes, seasonings, and cooked onions and peppers. Using hands, mix together well until all ingredients are incorporated together.
Put mixture into loaf pan sprayed with Cooking Spray. Bake 400 for 3-45 minutes. You can bake covered with aluminum foil for the first 20 minutes, then remove so the top will be browned.
Remove from oven when done, let sit for 15-20 minutes. Top with salsa if desired. Enjoy!
Makes 6-8 good slice servings, depending on size of loaf pan.
