A delicious all vegetable "pasta". Very tasty, filling, beautiful, and low-calorie. Great as a main dish or as a side. You can even twirl the carrot strips like regular noodles! Ingredients

3 Medium Carrots
1/2 Cup White or Red Onion
1/2 Cup Fresh Mushrooms
1/4 Cup Red or Green Peppers
1 TSP Garlic
2 TBSP Extra Virgin Olive Oil
1/4 Cup Tomato Sauce
Dash of Pepper
Dash of Salt
Directions
Wash carrots and using a vegetable peeler, grate the carrots into long thin strips.
Heat a pan on medium with the olive oil on the bottom and lightly salt the carrots before tossing them in the pan. Using tongs, continually toss the carrot strips for a few minutes until they become soft and then add the garlic, pepper, and other vegetables.
Continue tossing the vegetables together until carrot strips are slightly browned on the sides (make sure to not burn them) or cook until the desired softness of vegetables is reached.
Remove from the pan and top with your favorite pasta sauce. Enjoy!
