Ingredients

    1c whole wheat flour
    .5c unpacked brown sugar
    1 tbst baking powder
    2 tsp ground cinnamon
    1 tsp ground nutmeg
    .25 tsp salt
    1 lg egg slightly beaten
    2 lg egg whites slightly beaten
    1c non fat milk
    .5 c unsweetened applesauce
    1 c canned pumpkin
    1 tbsp vanilla extract
    30 gr chopped chocolate 60% cacao bittersweet

Directions

Preheat oven to 350 degrees. Place paper muffin cups in muffin tins. Mix all dry ingredients. Add rest of ingredients and mix until moistened. Fill paper cups 2/3 full. Bake about 20 mins or until toothpick inserted in center comes out clean. Cool on rack. It makes 24 muffins.
