Ingredients

    Olive Oil, 1 tbsp
    Minced Garlic, 1/2 tsp
    Onion, 1/2 small, chopped
    Red Lentils, 2 cups (about 400 g)
    Chicken or Vegetable bouillon, 2 cubes
    Potatoes, 4 very small, peeled and chopped
    Carrots, 2 small, finely chopped
    Water, 3 cups
    Curry powder, 1/2 tsp
    Cloves, ground, 1/8 tsp
    Ginger, ground, 1/8 tsp
    Turmeric, ground, 1/4 tsp
    Paprika, 1/8 tsp

Directions

Wash the red lentils in several changes of water until the water runs clear.

Heat oil in a deep non-stick pot. Fry garlic and onion until slightly browned. Add potatoes, carrots, lentils, 3 cups water, boullion, and lentils. Add curry powder and spices. Stir well and simmer on low heat for 30 minutes, or until lentils are soft and cooked.

Makes 6-8 servings and can be served on its own or with Basmati rice and yogurt (raita).
