Introduction
This is a marinade recipe that belongs to my friend Jodenna - very yummy! These are smaller serving sizes for Bariatric patients, a half chicken breast is equal to 1 serving and has just under 30 gr of Protein per serving. Ingredients
-
2 large boneless/skinless chicken breasts
1 tbsp lemon juice
1 tbsp olive oil
1/2 tbsp honey
1 clove minced garlic
1 tsp ground oregano
dash of salt & pepper
Directions
Mix all the ingredients together and put it in a ziplock bag with chicken and marinate for a minimum of 30 minutes in fridge.
The longer you marinate the better it will be I usually let it sit overnight.
Place each piece of chicken on a large piece of parchment paper, spoon a tbsp or so of marinade on top of chicken and fold in ends and bottom of parchment paper to make a pouch that will essentially steam your chicken in its own juices. A very low fat way to cook....I prefer this over a pan fry method as a single (one) tbsp of olive oil has almost 10gr of fat....healthier fat yes but fat none the less.
