Introduction

These are my version of morning glory muffins, I think everybody makes them a little different. I find that this muffin along with a fruit & yogurt smoothie is a perfect start to the day, and surprisenly enough these little muffins are very very filling! Did I mention they are DELICIOUS !!! Ingredients

    1.25 cups splenda
    2.25 cups whole wheat flour
    1 tbsp cinnamon
    2 tsp baking soda
    0.50 cup coconut
    0.75 cup raisins
    2 medium apples peeiled & grated
    8 ounce can of crushed pinapple (drain juice)
    2 cups grated carrots
    3 large eggs or egg subsitute
    1 cup 1% milk

Directions

Preheat oven to 350 degrees F

~mix all dry ingrdients in one bowl
~make a well in the dry ingridients and add all wet ingridients to center of bowl
~mix well
~if too dry you can add 2 tbsp milk
~use muffin papers when baking these muiffins
~dont overfill muffin paper as muffins will almost double in size
~bake 30-35 minutes and ensure a toothpick is dry when inserted into the muffin

    Shame. So many Splenda recipes... you do know that artificial sweeteners can slow your metabolism, right?
    Just use 3/4 cups sugar.

    most of my recipes have been created for weight loss surgery patients like myself, most of us can NOT tolerate real sugar....but you could certainly use real sugar in any of my splenda recipes to suit your needs/preferences better :)

    awesome muffins. My mix made 30 though! I used 1 cup sugar instead of splenda though.. so mine were about 95 colories each. will make again! - 5/7/09
