Ingredients

0.50 cup Egg substitute, liquid (Egg Beaters)
2 large Mushrooms, fresh
2 tbsp chopped Onions, raw
4 tbsp Green Peppers (bell peppers)
0.50 cup Spinach, fresh
4 tbsp Peppers, sweet, red, fresh
2 serving La Tortilla Factory, Whole Wheat Low Carb Tortilla
2 serving Jimmy Dean Turkey Sausage Patty (1 patty)
Tips
Cook the sausage and chop the veggies ahead of time so your breakfast is ready in no time.
Hurry, quick, I'm running late! Sound familiar? So you stop on your way and pick up a breakfast burrito. Sounds good. But wait, it's really not as good as it sounds. Unhealthy, a waste of precious calories, and a terrible way to start your day. How about having a Sausage, Egg & Cheese Breakfast Roll-Up remade so it is a quick and easy way to start your day? Directions
Preheat pan, and spray with nonstick cooking spray.
Scramble egg with pre-chopped veggies and pre-cooked sausage in bowl, mix and cook. Add cheese and allow to melt slightly.
Turn off stove, place tortillas on top of eggs to warm for a moment, then remove.
Fill tortillas, roll up and serve.
This is a versitile recipe. You can change the veggies to whatever you have on hand and get a diffferent flavor, experiment a little and ENJOY your day.
You can also pair this up with some fresh fruit if desired.

Thanks for sharing this. I make something similiar, except DH will nor eat egg substitute, (neither will I, LOL), so we use real Omege 3 eggs, also DH cannot eat turkey because of gout, so we leave out the turkey, and use Canadian bacon - also we use low fat cheddar cheese, Very Yummy! - 11/13/09

Have just looked at recipe for 1st time & have a suggestion to make morning prep faster. Night before, scramble eggs & vegetables until egg isn't quite done. Next am place shell, mixture & cheese on plate. Heat in microwave.
Or at least have all your vegetables cut up the night before. - 11/17/09

I often have the veggies leftover from the night befores dinner ( I even cut up extras so I'll have some and put them awa in the fridge so noone sees them) and it really helps in making a faster prep time. Thank you KBUCKMASH for your great suggestions.

I would really love to try this, but before I can I have to know: out of 10.7g of total fat, only 4.6g are accounted for on the nutritional breakdown. Do you know where the other 4.6g of fat are hiding? (I generally forgive a 1 or 2g discrepancy, but one that large raises red flags for me. help.) - 11/17/09

Eliminate sausage, use egg SW substitutes, 1/4 cup chopped veggies, onions, spinach, non-fat cheese, salsa and I use Mrs Dash southwest chipolte seasoning when cooking the eggs, an OLE high fiber tortilla (12 gms) low carb (5), warm tortilla in micro for 18 secs, fill. Chop veggies ahead & store - 1/5/10
