I used real eggs, the fat in the yolks gives it the body I expect in an egg dish.

Sure saves on calories and is filling.
This was very tasty and easy to make. I sprinkled the egg mixture with Italian Seasoning and I used a turkey sausage recipe from Taste of Home Comfort Foods but I omitted the salt and just added garlic powder instead.
I use 3 eggs (1 whole, 2 egg whites) instead of egg substitute. I also add a little low sodium soy sauce to the egg mixture before filling the tortilla. I make this weekly! Thanks!

Very tasty! I did do things a bit differently as I didn't have time to chop an onion and didn't have other veggies on hand that would be very good. I added 2tbsp of fat free re-fried beans and then added salsa. It was so good this morning, I think I'm going to do it again for dinner!
Made with Ole whole wheat tortilla wrap, 68 calories, or a 90 calorie Whole wheat Italian Herb Flatout. .Ground my own pork loin into sausage. Used fat reduced cheese blend. Lots of veggies,spinach, was very good.
Loved these! A few things we learned: found some low-carb tortillas that were lower in calories; 1 serving of Jimmy Dean sausage crumbles is enough for 2 rollups; more veggies and spice; liberal use of salsa.
